    Title: Matzo Toffee

    Yield: 1 Pound

    4 (to 6) unsalted matzo
    Crackers
    1 c Butter; diced
    1 c (packed) brown sugar
    3/4 c Semisweet chocolate chips
    1 ts Shortening
    1 c Slivered almonds; toasted

    Line a 15" X 10" X 1" baking pan with foil; line the
    foil with parchment. Arrange crackers in pan; set aside.

    In a large heavy saucepan over medium heat, melt butter.
    Stir in brown sugar. Bring to a boil; cook and stir for
    3-4 minutes or until sugar is dissolved. Spread evenly
    over crackers.

    Bake at 350ºF/175ºC for 15-17 minutes (cover loosely
    with foil if top browns too quickly). Cool on a wire
    rack for 5 minutes. Meanwhile, melt chocolate chips and
    shortening; stir until smooth. Stir in almonds; spread
    over top. Cool for 1 hour.

    Break into pieces. Cover and refrigerate for at least 2
    hours or until set. Store in an airtight container.

    Title: Keema Karela
    Categories: Indian
    Yield: 4 Servings

    1 Onionl chopped
    2 cl Garlic; ground into paste
    Fresh ginger (1");
    - ground into paste
    250 g Minced beef
    2 c Tomatoes (4); chopped
    2 Green chilies; chopped
    1 kg Karela
    1 ts Cumin
    1/2 ts Turmeric
    1 ts Garam masala
    1 ts Coriander powder
    1 ts Salt
    2 tb Oil; up to 3 tb

    Remove seeds from karela and cut into small pieces.

    Fry karela pieces with 1 to 2 tb oil until brown, set aside.

    Fry onions with 1 tb oil until brown.

    Add ginger and garlic paste.

    Add cumin, turmeric, garam masala, coriander, and salt.

    Add minced beef and fry well.

    Add fried karela pieces, tomatoes, and green chilies.

    Simmer with lid on pot for about 15 minutes.

    Remove lid and keep cooking until mixture is fairly dry.
