    Title: Chicken Spinach Pasta
    Categories: Pasta, Poultry, Dairy, Greens, Cheese
    Yield: 4 servings

    1 1/2 c Uncooked penne pasta
    1 lb Boned, skinned chicken; in
    - 1" cubes
    1/2 c Chopped onion
    2 ts Olive oil
    10 3/4 oz Can cream of mushroom soup;
    - undiluted
    1 c Heavy whipping cream
    10 c Coarse chopped fresh
    - spinach
    2 c Shredded mozzarella cheese
    1/8 ts Pepper
    Crushed red pepper flakes;
    - opt
    Parmesan cheese; opt

    Cook pasta according to package directions. Meanwhile,
    in a Dutch oven over medium heat, cook and stir chicken
    and onion in oil for 5 minutes or until chicken is no
    longer pink.

    Stir in soup and cream. Bring to a boil over medium
    heat. Reduce heat; simmer, uncovered, for 2 minutes.
    Stir in the spinach, cheese and pepper; cook for 1-2
    minutes or until spinach is wilted and cheese is melted.

    Drain pasta; add to chicken mixture and toss to coat. If
    desired, sprinkle with Parmesan and red pepper flakes.

    Title: Sweet Potato Casserole w/Pecans
    Categories: Potatoes, Dairy, Nuts
    Yield: 8 servings

    3 c Cold mashed sweet potatoes;
    - made w/o milk or butter)
    1 c Sugar
    3 lg Eggs
    1/2 c Milk
    1/4 c Butter; softened
    1 ts Salt
    1 ts Vanilla extract

    MMMMM--------------------------TOPPING-------------------------------
    1/2 c (packed) brown sugar
    1/2 c Chopped pecans
    1/4 c A-P flour
    2 tb Cold butter

    Set oven @ 325ºF/165ºC.

    In a large bowl, beat the sweet potatoes, sugar, eggs,
    milk, butter, salt and vanilla until smooth. Transfer to
    a greased 2-qt. baking dish.

    In a small bowl, combine the brown sugar, pecans and
    flour; cut in butter until crumbly. Sprinkle over sweet
    potato mixture. Bake, uncovered, until a thermometer
    reads 160°, 45-50 minutes.
