    Title: Sloppy Ottos
    Categories: Pork, Vegetables, Breads, Cheese
    Yield: 8 Servings

    1 lb Bulk spicy pork sausage
    1 1/2 c Sauerkraut; rinsed, well
    - drained
    2 md Bell peppers; any colour,
    - chopped
    1 md Onion; chopped
    8 Pretzel or regular hamburger
    - buns; split
    8 sl Provolone cheese

    Set oven to 350ºF/175ºC.

    In a large skillet, cook sausage over medium heat 4-6
    minutes or until no longer pink, breaking into crumbles;
    drain. Add sauerkraut, peppers and onion; cook and stir
    8-10 minutes longer or until vegetables are tender.

    Spoon meat mixture onto bun bottoms; place cheese over
    meat. Replace tops. Place on a baking sheet. Bake 4-6
    minutes or until cheese is melted.

    Title: Twice-Baked Potatoes
    Categories: Potatoes, Dairy, Vegetabls, Pork, Cheese
    Yield: 6 servings

    6 lg Baking potatoes
    1/2 c Butter; softened
    3/4 c (to 1 c whole milk or heavy
    - whipping cream
    3 tb Crumbled cooked bacon
    3 tb Fine chopped onion
    1 tb Minced chives
    1/2 ts Salt
    ds Pepper
    1 1/2 c Shredded Cheddar cheese;
    - divided
    Paprika

    Scrub and pierce potatoes. Bake @ 375ºF/190ºC for 1 hour
    or until tender. When cool enough to handle, cut a thin
    slice off the top of each potato and discard. Scoop out
    the pulp, leaving thin shells.

    In a large bowl, mash the pulp with butter. Stir in the
    milk, bacon, onion, chives, salt, pepper and 1 cup
    cheese.

    Spoon into potato shells. Bake, uncovered, at 375° for
    20 minutes. Sprinkle with remaining 1/2 cup cheese and
    paprika. Bake 5 minutes longer or until cheese is
    melted.
