Title: Buttermilk Mashed Potatoes

2 lb Potatoes; peeled, in 1"
- cubes
2 c Water
1 c Chicken broth
6 cl Garlic; peeled
1/2 c Buttermilk
1/4 c Thin sliced green onions
1 ts Salt
1/8 ts Pepper
Butter; melted, opt
In a large saucepan, combine potatoes, water, broth and
garlic. Bring to a boil. Reduce heat; cover and simmer
until potatoes are tender, 12-15 minutes.
Meanwhile, in a small saucepan, heat buttermilk until
warm. Drain potatoes and garlic; mash with buttermilk.
Stir in onions, salt and pepper. If desired, served with
butter and additional green onions.
