    Title: Classic Buffet Meatballs
    Categories: Beef, Meatballs, Cheese, Breads, Vegetables
    Yield: 16 Meatballs

    4 cl Garlic; minced
    1 lg Egg
    1/3 c Breadcrumbs
    1/3 c Parmesan cheese
    1 ts (ea) salt & fresh cracked
    - pepper
    1 lb Fine ground chuck beef
    2 tb Fine chopped fresh parsley

    In a large mixing bowl combine the garlic, egg, parsley,
    breadcrumbs, Parmesan, salt and pepper. Then add in the
    beef and mix everything until it is well combined.

    Use clean hands to shape the meatballs into 1/2" round
    circles and place on a lined baking sheet.

    Set the oven to 350ºF/175ºC.

    Bake the meatballs for about 20 minutes, rotating them
    with a wooden spoon halfway through.

    Once they meatballs are cooked, remove them from the oven
    and allow to cool. Then chill them in the fridge until you
    are ready to place in the buffet chafing dish.

    Use a sweet glaze or savoury gravy.

    Doubles or more easily.

    Title: Baked Sweet Potato Chips
    Categories: Potatoes, Herbs
    Yield: 5 Dozen

    2 md Sweet potatoes (about 7
    - oz each), peeled
    Cooking spray
    1 ts Dried rosemary, crushed
    1 ts Dried parsley flakes
    3/4 ts Garlic salt
    1/2 ts Paprika
    1/4 ts Ground mustard
    ds White pepper

    Set oven @ 400ºF/205ºC.

    Cut potatoes into 1/8-in. slices; spray both sides of
    slices with cooking spray. In a large bowl, combine
    seasonings. Add the potatoes; toss gently to coat.

    Arrange in a single layer in two 15x10x1-in. baking pans
    coated with cooking spray. Bake, uncovered, until
    potatoes are golden brown and tender, turning several
    times, 20-25 minutes.
