    Title: Buffet Chicken
    Categories: Poultry, Vegetables, Dairy, Mushrooms, W/ine
    Yield: 4 Servings

    2 lb Chicken breasts or thighs
    Flour
    Oil
    Salt & pepper
    Butter
    1 cl Garlic; minced
    6 Green onions; chopped
    1/2 c Mushrooms
    2 tb Flour
    1/2 c W/ater
    1/2 c Sherry
    1/2 ts Paprika
    1/2 ts Thyme
    1 ts Parsley; chopped
    7 oz Can sliced black olives
    14 oz Can consomme'
    1 c Dairy sour cream

    Bone and skin chicken. Flour lightly and brown in oil.
    Salt and pepper and place in large casserole.

    Saute garlic, onions, and mushrooms in butter until tender
    but not brown. Add this to the chicken. Make a paste of
    flour, water, and sherry. Pour over the chicken. Then
    sprinkle on the paprika, thyme, and parsley. Add olives
    and pour over all the can of consomme'.

    Bake at 350ºF/175ºC until tender, about 40 to 60 min.

    Add the sour cream and heat through.

    This may be made far ahead and even frozen. Just reheat
    and stir in the sour cream until heated (do NOT boil),
    abt. 10 minutes.

    Serve in chafing dish.

    Title: Broccoli Potato Supreme
    Categories: Potatoes, Vegetables, Dairy, Cheese
    Yield: 8 servings

    3 c Hot mashed potatoes
    3 oz Cream cheese; softened
    1/4 c Whole milk
    1 lg Egg
    2 tb Butter; softened
    1/2 ts Salt
    1/4 ts Pepper
    2 13/16 oz Can French-fried onions;
    - divided
    4 1/2 c Fresh broccoli florets
    1 c Shredded cheddar cheese

    In a bowl, combine the first 7 ingredients; beat until
    smooth. Fold in half of the onions. Spread onto the
    bottom and up the sides of a greased 13x9-in. baking
    dish, forming a shell. Bake, uncovered, @ 350ºF/175ºC
    for 20-25 minutes or until edges are lightly browned.

    In a saucepan, cook broccoli in a small amount of
    simmering water until crisp-tender; drain. Place in the
    potato shell. Sprinkle with cheese and remaining onions.
    Bake 10 minutes longer.
