    Title: Taco Stuffed Sweet Potatoes
    Categories: Poultry, Potatyoes, Beans, Chilies, Cheese
    Yield: 4 servings

    4 md Sweet potatoes
    1 tb Oil
    1/2 lb Ground turkey
    1/2 sm Onion; chopped
    1 c Black beans; rinsed,
    - drained
    2 ts Chilli spice mmix
    1 ts Ground cumin
    1/2 ts Garlic powder
    3/4 ts Salt; divided
    1 c Shredded Monterey Jack
    - cheese
    1/2 c Guacamole
    1/4 c Salsa
    2 tb Minced fresh cilantro

    Set oven @ 400ºF/205ºC.

    Pierce sweet potatoes with a fork; wrap in foil. Place
    on a 15" X 10" X1" baking sheet. Bake 55-60 minutes or
    until fork-tender. Let cool 10 minutes.

    Meanwhile, heat oil in a large skillet to medium heat.
    Add turkey and onion; cook 7-8 minutes or until turkey
    is browned. Stir in black beans, chili powder, cumin,
    garlic powder and 1/2 teaspoon salt. Add 3-4 tablespoons
    water; bring to a simmer for 1-2 minutes or until
    thickened.

    Cut a slit in the top of the sweet potatoes; spread open
    to make a pocket. Season with remaining 1/4 teaspoon
    salt. Stuff sweet potato pockets with the turkey black
    bean mixture. Sprinkle each with shredded cheese. Bake
    another 2-3 minutes or until cheese is melted. Top with
    guacamole, salsa and cilantro.

    Title: Pretty Duchess Potatoes
    Categories: Potatoes, Dairy, Herbs
    Yield: 6 Servings

    2 lb Russet potatoes, peeled and
    - quartered
    3 lg Egg yolks
    3 tb Milk
    2 tb Butter
    1 ts Salt
    1/4 ts Pepper
    1/8 ts Ground nutmeg
    1 lg Egg, lightly beaten

    Place potatoes in a large saucepan and cover with water.
    Bring to a boil. Reduce heat; cover and simmer 15-20
    minutes or until tender. Drain. Over very low heat, stir
    potatoes 1-2 minutes or until steam has evaporated.
    Remove from heat.

    Set oven @ 400ºF/205ºC.

    Press potatoes through a potato ricer or strainer into a
    large bowl. Stir in the egg yolks, milk, butter, salt,
    pepper and nutmeg.

    Using a pastry bag or heavy-duty resealable plastic bag
    and a large star tip, pipe potatoes into 6 mounds on a
    parchment-lined baking sheet. Brush with beaten egg.
    Bake 20-25 minutes or until golden brown.

    Title: Orange Ricotta Pancakes
    Categories: Breads, Citrus, Cheese
    Yield: 12 servings

    1 1/2 c A-P flour
    3 tb Sugar
    1 1/2 ts Baking powder
    1/2 ts Baking soda
    1/4 ts Salt
    1 lg Egg; room temp
    1 c Ricotta cheese
    3/4 c Milk
    1/2 ts Grated orange zest
    1/2 c Orange juice
    1/4 c Butter, melted
    1/2 ts Vanilla extract

    MMMMM---------------------OPTIONAL TOPPINGS--------------------------
    Syrup
    Butter
    Confectioners' sugar

    In a bowl, whisk the first 5 ingredients. In another
    bowl, whisk egg, ricotta, milk, orange zest, orange
    juice, melted butter and vanilla until blended. Add to
    dry ingredients; stir just until moistened.

    Lightly grease a griddle; heat over medium heat. Pour
    batter by 1/4 cupfuls onto griddle. Cook until bubbles
    on top begin to pop and bottoms are golden brown. Turn;
    cook until second side is golden brown. If desired,
    serve with syrup, butter and confectioners' sugar.
