    Title: Pineapple Pork Chops
    Categories: Pork, Fruits, Vegetables
    Yield: 6 servings

    6 Boneless pork loin chops; 5
    - oz ea
    1/2 ts (ea) salt & pepper
    3 tb Olive oil
    2 Shallots; minced
    1 c Pineapple preserves
    1/4 c Soy sauce
    1 tb Dijon mustard
    1 bn Green onions; thin sliced

    Season pork chops with salt and pepper. In a large
    nonstick skillet, heat olive oil over medium heat. Cook
    pork chops 6-8 minutes on each side; remove from pan,
    reserving drippings.

    In same pan, saute shallots in drippings until lightly
    browned. Whisk together pineapple preserves, soy sauce
    and Dijon; add to pan. Bring to a boil. Reduce heat;
    simmer, until slightly thickened, about 5 minutes.

    Add chops back to pan, turning to coat. Sprinkle with
    sliced green onion.

    Title: Herbed Party Potato Wedges
    Categories: Potatoes, Herbs, Dairy, Cheese
    Yield: 48 Servings

    6 lg Russet potatoes; in 8 wedges
    - each
    1/4 c Olive oil
    4 ts Minced fresh rosemary
    4 ts Minced fresh thyme
    1 1/2 ts Sea salt
    3/4 ts Pepper
    1 1/2 c Sour cream
    1/3 c Grated Parmesan cheese
    2 cl Garlic; minced

    Set oven @ 425ºF/218ºC

    Combine first six ingredients; toss to coat. Transfer
    potato wedges to baking sheets or a cooking stone. Bake
    40-45 minutes or until browned on bottom, turning once.
    Meanwhile, to make sauce, mix sour cream, Parmesan
    cheese and garlic in a small bowl; refrigerate until
    serving.

    Title: Bacon Cheeseburger Rice
    Categories: Beef, Pork, Cheese, Rice, Vegetables
    Yield: 4 servings

    1 lb Ground beef
    1 3/4 c Water
    2/3 c BBQ sauce
    1 tb Prepared mustard
    2 ts Dried minced onion
    1/2 ts Pepper
    2 c Uncooked instant rice
    1 c Shredded Cheddar cheese
    1/3 c Chopped dill pickles
    5 sl Bacon; cooked, crumbled

    In a large skillet over medium heat, cook beef until no
    longer pink; drain. Add the water, barbecue sauce,
    mustard, onion and pepper.

    Bring to a boil; stir in the rice. Sprinkle with cheese.
    Reduce heat; cover and simmer for 5 minutes. Sprinkle
    with pickles and bacon.
