    Title: Butternut Turkey Soup
    Categories: Squash, Poultry, Vegetables, Potatoes, Herbs
    Yield: 6 servings

    3 Shallots; thin sliced
    1 ts Olive oil
    3 c Chicken broth
    3 c Peeled butternut squash; in
    - 3/4" dice
    2 md Red potatoes; in 1/2" dice
    1 1/2 c Water
    2 ts Minced fresh thyme
    1/2 ts Pepper
    2 Whole cloves
    3 c Diced, cooked turkey

    In a large saucepan coated with cooking spray, cook
    shallots in oil over medium heat until tender. Stir in
    the broth, squash, potatoes, water, thyme and pepper.

    Place cloves on a double thickness of cheesecloth; bring
    up corners of cloth and tie with string to form a bag.
    Stir into soup. Bring to a boil. Reduce heat; cover and
    simmer for 10-15 minutes or until vegetables are tender.
    Stir in turkey; heat through. Discard spice bag.

    Title: Easy Salisbury Steak
    Categories: Beef, Mushrooms, Dairy, Vegetables
    Yield: 4 servings

    1/3 c Chopped onion
    1/4 c Crushed saltines
    1 lg Egg white; lightly beaten
    2 tb Milk
    1 tb Prepared horseradish
    1/4 ts Salt
    1/8 ts Pepper
    1 lb 90% lean ground beef
    12 oz Jar beef gravy
    1 1/2 c Sliced fresh mushrooms
    2 tb Water
    Hot cooked noodles; opt

    In a large bowl, combine the onion, saltines, egg white,
    milk, horseradish, salt if desired, and pepper. Crumble
    beef over mixture. Shape into 4 oval patties.

    In a large skillet over medium heat, cook patties until
    no pink remains, 5-6 minutes per side.

    Remove patties and keep warm. Add the gravy, mushrooms
    and water to skillet; cook until heated through, 3-5
    minutes. Serve with patties and, if desired, noodles.
