    Title: Southwestern Turkey Bake
    Categories: Poultry, Vegetables, Greens, Cheese, Breads
    Yield: 12 servings

    2 lg Onions; chopped
    2 Jalapeno peppers; seeded,
    - chopped
    2 tb Butter
    6 c Diced cooked turkey
    21 1/2 oz (2 cans) cream of chicken
    - soup; undiluted
    2 c Sour cream
    10 oz Box chopped spinach; thawed,
    - squeezed dry
    2 c Shredded Monterey Jack
    - cheese
    9 3/4 oz Bag nacho-flavored tortilla
    - chips; crushed
    4 Green onions; sliced

    Set oven @ 350oF/175oC.

    In a Dutch oven, saute onions and jalapenos in butter
    until tender. Stir in turkey, soup, sour cream and
    spinach. In a greased 13x9-in. baking dish, spread half
    the turkey mixture, cheese and tortilla chips. Repeat
    layers.

    Bake, uncovered, 25-30 minutes or until bubbly. Let
    stand 5 minutes before serving. Sprinkle with green
    onions

    Title: Old-Fashioned Sweet Potato Casserole
    Categories: Potatoes, Dairy, Herbs, Candy
    Yield: 10 servings

    4 lb Sweet potatoes; peeled,
    - diced
    1 c Milk
    1/2 c (packed) brown sugar
    6 tb Butter; softened
    1 lg Egg; lightly beaten
    1 1/2 ts Ground cinnamon
    1 1/2 ts Vanilla extract
    3/4 ts Ground allspice
    1/2 ts Salt
    1/4 ts Ground nutmeg
    18 lg Marshmallows

    Place sweet potatoes in a large saucepan; cover with
    water. Bring to a boil. Reduce heat; cover and cook
    until tender, 15-20 minutes; drain.

    Transfer to a large bowl and mash. Add milk, brown
    sugar, butter, egg, cinnamon, vanilla, allspice, salt
    and nutmeg; beat until smooth.

    Transfer to a greased shallow 2 1/2 qt. baking dish.
    Bake, uncovered @ 350ºF/175ºC until heated through,
    40-45 minutes. Top with marshmallows. Bake just until
    marshmallows begin to puff and brown, 5-10 minutes
    longer.
