    Title: Anytime Turkey Chilli
    Categories: Poultry, Vegetables, Chilies, Herbs, Beans
    Yield: 8 servings

    2/3 c Chopped sweet onion
    1/2 c Chopped green pepper
    1 1/2 ts Dried oregano
    1 ts Ground cumin
    1 ts Olive oil
    2 cl Garlic; minced
    16 oz Can kidney beans; rinsed,
    - drained
    15 1/2 oz Can Great Northern beans;
    - rinsed, drained
    15 oz Can pumpkin
    15 oz Can crushed tomatoes
    14 1/2 oz Can chicken broth
    1/2 c Water
    2 tb Brown sugar
    2 tb Chilli spice mix
    1/2 ts Pepper
    3 c Diced cooked turkey
    Shredded Cheddar cheese;
    - opt

    In a large saucepan, saute the onion, green pepper,
    oregano and cumin in oil until vegetables are tender.
    Add garlic; cook 1 minute longer.

    Stir in the beans, pumpkin, tomatoes, broth, water,
    brown sugar, chilli spice and pepper; bring to a boil.
    Reduce heat; cover and simmer for 1 hour. Add turkey;
    heat through. If desired, top with cheddar cheese.

    Title: Crunchy Macaroni & Cheese
    Categories: Pasta, Cheese, Breads, Dairy
    Yield: 9 servings

    16 oz Elbow macaroni
    3/4 c Butter; melted, divided
    16 oz Shredded sharp Cheddar
    - cheese
    4 lg Eggs; beaten
    3 c Milk
    1/2 ts (ea) salt & black pepper
    24 Saltine crackers; coarse
    - crushed

    Set oven @ 350ºF/175ºC.

    Coat a 1 1/2 quart or 9" x 13" baking dish with cooking
    spray; set aside.

    Cook macaroni according to package directions; drain,
    rinse, and drain again.

    In a large bowl, combine macaroni, 1/2 cup butter, the
    cheese, eggs, milk, salt, and pepper. Spoon into
    prepared baking dish.

    Lay crackers in a single layer over top of casserole and
    drizzle with remaining 1/4 cup melted butter.

    Bake 35 to 40 minutes, or until heated through and top
    is golden.

    MAKES: 6 - 10 servings
