    Title: Turkey Soup
    Categories: Poultry, Rice, Vegetables;
    Yield: 12 servings

    1 Leftover turkey carcass from
    - a 14 lb turkey
    3 qt Water
    29 oz (2 cans) chicken broth
    1/2 c Uncooked long grain rice
    1 md Onion; fine chopped
    4 Celery ribs; fine chopped
    2 md Carrots; grated
    1 Bay leaf
    ds Poultry seasoning
    1/2 ts Onion powder
    1/2 ts Garlic powder
    1/4 ts Pepper
    Salt & parsley; opt

    In a stockpot, place turkey carcass, water and broth.
    Bring to a boil. Reduce heat; cover and simmer 4-5
    hours.

    Remove carcass from stock. Remove any meat; dice. Return
    to stock along with rice, onion, celery, carrots, bay
    leaf and poultry seasoning. Add remaining seasonings to
    taste. Cover; simmer over medium-low heat until rice is
    cooked. Discard bay leaf. If desired, garnish with
    minced fresh parsley.

    Title: Wets (French Fries w/Gravy)
    Categories: Five, Sauces, Potatoes
    Yield: 5 Servings

    1 qt Stock: chicken, or veal/beef
    2 oz A-P flour
    2 oz Butter or oil
    Salt & pepper

    MMMMM--------------------------TO SERVE-------------------------------
    8 c French fries; cooked

    In a 2 quart pot bring stock to a boil. Add the butter
    and the flour, whisking continually over high heat, for
    about 3 min.

    Lower the heat to a simmer and continue to cook for
    around 35 minutes, stirring frequently.

    Strain the sauce, and add salt and pepper to taste.

    If you want your sauce to be thicker, lower the heat to
    medium and let it reduce further.

    FOR SERVING: Put an order of French fries in a bowl,
    cover the French fries with the gravy/sauce.

    Makes: 4 to 6 servings
