    Title: Lemon-Butter Tilapia w/Almonds
    Categories: Seafood, Citrus, Nuts, Wine
    Yield: 4 servings

    4 (4 oz ea) tilapia fillets
    1/2 ts Salt
    1/4 ts Pepper
    1 tb Olive oil
    1/4 c Butter; in cubes
    1/4 c White wine or chicken broth
    2 tb Lemon juice
    1/4 c Sliced almonds

    Sprinkle fillets with salt and pepper. In a large
    nonstick skillet, heat oil over medium heat. Add
    fillets; cook until fish just begins to flake easily
    with a fork, 2-3 minutes on each side. Remove and keep
    warm.

    Add butter, wine and lemon juice to same pan; cook and
    stir until butter is melted. Serve with fish; sprinkle
    fish with almonds.

    Title: Strawberry Trifle
    Categories: Dairy, Fruits, Cakes, Citrus
    Yield: 10 servings

    1 c Milk
    1 c Sour cream
    3 3/8 oz Box instant vanilla pudding
    - mix
    1 ts Grated orange zest
    2 c Heavy whipping cream;
    - whipped
    8 c Angel food cake; in cubes
    4 c Sliced fresh strawberries
    Add'l sweetened whipped
    - cream; opt

    In a large bowl, beat the milk, sour cream, pudding mix
    and orange zest on low speed until thickened. Fold in
    whipped cream.

    Place half the cake cubes in a 3-qt. glass bowl. Arrange
    a third of the strawberries around side of bowl and over
    cake; top with half the pudding mixture. Repeat layers
    once. Top with remaining berries. Refrigerate for 2
    hours. If desired, top with additional sweetened whipped
    cream just before serving.
